Preheat oven to 350 degrees Fahrenheit.
Cook pasta according to package directions. Meanwhile, dice the bell pepper, onion, and chicken. Cook over medium to medium-low heat until chicken is no longer pink and vegetables are soft.
Place the marinara and BBQ sauces in a pot. Bring to a boil, reduce heat, and simmer 5 minutes.
In a bowl, combine pasta through sauce. Add half the cheese.
Place the pasta mixture into a greased 9-inch baking tray. Bake 20 minutes, covered. Remove from oven and top with shredded cheese. Bake uncovered 5 minutes until cheese is melted.
For a long time, I thought of baking pasta as an extra step that delayed dinner. So, I had not made a pasta bake in years when I decided to make this one. Our freezer had leftover homemade bbq sauce that needed to be used, and this seemed like a good way to do it.
My four-year-old enthusiastically gobbled down the pasta. I had previously made several different pastas for my children, only to get complaints. Baking the pasta melded the flavors together with melted cheese, making it very kid-friendly. My attitude toward pasta bakes has changed and the dish is now a regular dinner selection.
