Preparing the chicken
Preheat oven to 350 degrees. Season chicken and coat with a little oil. Bake 25-30 minutes. Remove from oven and roughly chop.

Cooking the pasta
Cook pasta according to package directions. Meanwhile, prep the remaining ingredients.

Preparing the plants
Slice the bell pepper into strips. Peel the apples, then shred or finely chop.

Making the sauce
Combine peanut butter through lime juice in a large bowl. Whisk to combine. Add all previous ingredients and toss together until coated.

Story

I use this peanut butter sauce a lot, but the pasta usually includes half a head of cabbage. I went to make the usual meal and discovered the leftover cabbage had disappeared. Looking around for a replacement, I found apples on the counter. Remembering that my children frequently eat sliced apples with peanut butter, I decided that shredded apples would be a good alternative.
