Directions

Cooking the vegetables and protein
Wash and chop the spinach. Dice the bell pepper, celery or carrot, onion, and garlic cloves. Cook vegetables over medium heat until soft. Add meat and cook until browned. If using lentils, cook separately (simmer 15-20 minutes), then add to vegetable mixture.

Making the sauce
Add remaining ingredients through oregano to the vegetable and protein mixture. Bring to a boil, then reduce heat and simmer 5-10 minutes.

Serving
Spoon sloppy joes onto hamburger buns. Top with sliced cheese if desired.
