Wash potatoes, then peel them if desired. Cut potatoes into bite-size pieces. Place in a pot, cover with water. Bring water to a boil, then reduce heat and simmer 10-15 minutes until tender.

Meanwhile, chop vegetable and cook or leave raw. In a bowl, combine oil, dairy product, seasoning, and herb. Toss with cooked potatoes and vegetable.
